Opening of the Erasmus Food Lab

On 16 October, the cooking studio of the Erasmus Food Lab was officially opened. The Erasmus Food Lab aims to contribute to the improvement of eating habits and the sustainability of consumption towards new global lifestyle habits. In collaboration with students, researchers, chefs and food professionals, the Erasmus Food Lab develops ideas for a sustainable food culture from an academic environment, with a focus on the mainstreaming and marketing of plant based alternatives for now and the near future.

Behavioural Research

The Erasmus Food Lab forms a partnership with students, schools and organisations & companies. These parties collaborate to create a multidisciplinary food platform for discovering and sharing market strategies aimed towards sustainable and healthy food. Moreover, they  intend to create a larger impact of sustainability programmes. To reach this goal, the Erasmus Food Lab offers assistance to students in their research on behavioral change towards a more sustainable consumer. The Food Lab facilitates research for nudging consumers towards healthier, more sustainable and more plant based food choices as well as research into the perception of taste and sense of food experiences and the interaction of these factors in relation to sustainable and healthy food choices. The organisations which are connected to the Food Lab can immediately benefit of the results from these researches as the Food Lab strives to maintain an inspiring and sustainable relationships with these organisations in order to share knowledge about a sustainable and healthy lifestyle. 

Sustainable cooking

The Erasmus Food Lab offers plant based cooking workshops and tutorials to inspire you and to generate interest in healthy cooking, while contributing to a more sustainable world. These workshops are meant to bring students, employees and visitors together and to make them aware of the sustainability of their lifestyle. During these workshops, new plant based products are developed and tested in collaboration with food professionals. Moreover, marketing research is conducted about the perception of taste of both existing and new plant based products. 

In order to make students and employees acquainted with cooking sustainable, plant-based meals with local vegetables, the Erasmus Food Lab organises weekly food workshops in their professional kitchen on campus. These workshops are held every Wednesday, until 19 December, from 17:00 till 18:00, and can be attended by all students and employees at a price of 5 euros per person (dinner included).
